Spinach and Ricotta Quiche Recipe

Ingredients [6 persons]

  • 1 shortcrust pastry
  • 400g spinach
  • 10 cl heavy cream
  • 1 pinch of Nutmeg
  • 250g ricotta
  • 3 eggs
  • 20g butter
  • 1 pinch of salt or fine salt
  • 1 pinch of pepper


Equipment 

  • Traditional oven
  • Pie pan
  • Bowl
  • Frying pan

Directions:

  • Wash the spinach, remove the ribs and wring them out.
  • Melt the butter in a frying pan. 
  • Add the spinach and sauté for around 8 minutes. Then let them cool in a colander to remove the rest of the water, then chop them coarsely.
  • Beat the eggs and the cream in a bowl. 
  • Add the spinach, the ricotta, salt, pepper, and then add the Nutmeg.
  • Pour the filling over the dough and cook for about 30 minutes at 175C/345F.
  • Let cool a little before serving.
