Smoked Salmon and Zucchini Quiche Recipe
How can you go wrong with smoked salmon quiche recipes? It turns a simple meal into a gourmet feast. This smoked salmon and zucchini quiche is one of my favorite dishes of all time as it is dense in protein, healthy fats, and vitamins. I like my quiche to be tasty and inexpensive. This quiche meets all the conditions. A petite piece of salmon or so can feed up to 6 people. The zucchini adds taste along with the goat cheese and olive oil bring it all together with a wonderful freshness. The perfect combination to take this salmon zucchini flavored quiche to the next level.

Ingredients:
- 1 quiche crust
- 2 tbsp. extra virgin olive oil
- 4 cloves garlic, minced
- 4 medium zucchinis
- 5 eggs
- 8 oz. milk
- 4 oz. heavy cream
- 1 cup grated goat cheddar
- 1/4 tsp nutmeg
- 5-6 leaves fresh sage, thinly sliced
- 6 oz. Alaska wild-caught smoked salmon
- fresh ground salt & pepper to taste
- Preheat oven to 350˚F.
- Roll out crust and place in 9-inch pie pan.
- Cut zucchini in 4 length-wise, then cut into cubes.
- In a skillet heat olive oil.
- Add garlic and zucchini. Cook until just tender.
- Remove from skillet and arrange it on the bottom of the quiche crust.
- Cut salmon into 1/2 inch pieces.
- Arrange with zucchini. Add shredded cheese.
- In a mixing bowl beat eggs slightly. Add cream and milk and whisk until blended.
- Add nutmeg, sage, salt, and pepper.
- Pour mixture over salmon and zucchini.
- Bake at 450 for 35-40 minutes or until the filling is set and golden brown and the crust is golden.
