INGREDIENTS

If you are going to make this quiche with a crust, then you are going to need:
  • Coconut flour
  • almond flour
  • 1 egg, large
  • Some salt
  • Butter

As for the filling, you will need:
  • 1 lb (453 g) frozen spinach, thawed
  • 6 large eggs
  • 3/4 cup, (226.7 g) heavy cream
  • 150g (5 oz) bacon, thickly cut
  • 8 ounces cheddar cheese, grated (Swiss can be an alternative)
  • 1 small onion, thinly sliced or minced
  • 1 pinch nutmeg
  • 1/4 teaspoon pepper
  • 3/4 teaspoon salt
  • 1 teaspoon lemon zest (optional)

DIRECTIONS

  • Cook the bacon until it becomes crispy then chop it. 
  • You can bake a pound of bacon but use just 1/3 for this keto recipe.
  • Grease the glass dish or the pie plate. 
  • Preheat oven to 350F.
  • Thaw the spinach and squeeze to dry. 
  • Cut the onion into thin slices or mince it. 
  • Grate the cheddar/Swiss cheese.
  • Combine all of the ingredients in a large bowl.
