You can add other ingredients like bacon or caramelized onions for a savory twist.

Ingredients:

  • Pastry dough (homemade or store-bought)
  • 2-3 ripe figs, thinly sliced
  • 100g camembert cheese, thinly sliced
  • 2-3 eggs
  • 1 cup (240ml) milk or cream (or half and half)
  • 1/4 cup (50g) grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper
  • Optional: 2-3 slices cooked bacon, chopped
  • Optional: 1/2 onion, thinly sliced

Instructions:

  1. Preheat oven to 190°C (375°F). Line a pie dish with the pastry dough. Prick the bottom with a fork to prevent air bubbles. Bake for 10 minutes, or until lightly golden brown. Remove from oven and let cool slightly.
  2. While the crust is baking, heat olive oil in a skillet over medium heat. If using, add the onions and cook until softened and translucent, about 5 minutes. If using, add the bacon and cook until crispy. Set aside.
  3. In a large bowl, whisk together the eggs, milk, Parmesan cheese, salt, and pepper.
  4. Arrange the sliced figs and camembert cheese over the bottom of the pre-baked crust. If using, sprinkle the cooked bacon and onions on top.
  5. Pour the egg mixture over the filling.
  6. Bake for 35-40 minutes, or until the quiche is set and the top is golden brown. A knife inserted in the center should come out clean.
  7. Let the quiche cool for at least 15 minutes before slicing and serving.

Beginner Tips:

  • For a richer flavor, use full-fat milk or cream.
  • You can use fresh or dried thyme for an extra herbal flavor.
  • If your figs are very ripe, you can toss them in a little bit of flour before adding them to the quiche to prevent them from becoming too mushy.
  • Leftover quiche can be stored in the refrigerator for up to 3 days. Reheat in the oven until warmed through.
